Flat should only be used if you plan to do some moderate to serious post processing in a moderate to serious video editing application. It is not suitable for or intended to go straight to production for people to see as a finished product. Post processing is required to actually bring out and adjust the color, shadows, highlights, etc. The free GoPro studio will not do that. Professional applications that cost money are required. And you need some education in how to do it.

GoPro Color is what most people should be using since most people cannot or do not want to do what is described above. The camera will process the color, highlights, shadows, etc and do a pretty good job of it. No different than how any other consumer camera works.

The other settings in ProTune are similar. Native white balance for example. You need constant post processing adjustment of the color if you use native. So it again should not be used unless you know what you're doing in post processing and plan to do it. Use the fixed color temps or auto.
