I have trouble with props showing in medium view also if I fly too fast. You can crop this out with some video editing. I try to slow down my flying. This would be hard to do, filming a fast boat.
 
Yeah. If medium FOV doesn't solve it, then cropping it out in post production is your best bet.
 
If you set you gimbal to 85 deg. or lower it helps keep the props out of the shot. Solo wasn't made to film at high speed- great drone video and high speed don't mix!
 
Try using the fisheye removal tool in GoPro Studio. It will probably remove most of your legs and arms.

Also, if you shoot in 4K Wide, you can crop a lot and still be left with an image resolution MUCH higher than 1080P. People shoot in different resolutions, formats, and fps, but in the end most content is (or should be) delivered in 1080P - at least for a little while longer.
