I'm not so sure I follow?

It's a protocol just like any other such as FTP and SSH. You need a standard to be able to easily communicate across many different platforms (drones/quads/whatever).

That's why when you run a MAVLink compatible GCS, you can expect your MAVLink compatible drone to behave the same and is not hardware specific.
