Fly "Flat" or Follow the Terrain during Aerial Survey Mission?

Assuming you have terrain that changes elevation quite a bit, has anybody had experience comparing results in generating an orthomosaic based on a fixed altitude as compared to an elevation that tries to stay a consistent distance above the ground? Does it really matter either way? Thanks for any thoughts.
 
none of the processing apps or services i have used has issues with elevation changes. pix4d, photoscan, sitescan, dronedeploy, ddms and reality capture had no problem with elevation.
 
For a proper orthomosaic you want constant pixel size. This means you require constant height above ground.
